Karbon & Beyaz Fırın: A Legacy of Architectural Transformation

Since 2010, the Karbon architectural team has been a pivotal force in the evolution of Beyaz Fırın, a brand synonymous with quality and tradition in Istanbul’s culinary landscape. Our journey began with the thoughtful renewal of existing Beyaz Fırın branches in Suadiye, Ataşehir, Erenköy, and Kadıköy, breathing new life into beloved spaces.

A significant turning point arrived in 2015 with the Akasya AVM project. For this landmark location, we developed a completely new architectural design concept that would set the standard for future branches. This innovative approach was then applied to subsequent high-profile openings including Etiler, Kanyon, Göktürk, Moda, Nişantaşı, İstinye, Mall of İstanbul, and Kızıltoprak.

Beyaz Fırın Akasya: A New Chapter in Mall Environments

In 2014, Beyaz Fırın ventured into a new retail format by opening its first store within a shopping mall at Akasya AVM. As a brand renowned for its on-site production, integrating a functional kitchen, efficient storage, seamless operations, and inviting customer areas within the inherent constraints of a mall environment required meticulous planning.

Karbon took on the challenge, designing the architectural concept for the Akasya Mall location. We adhered strictly to its technical specifications while ensuring seamless functionality across all zones. This project was groundbreaking for us as it marked the first instance where our architectural and visual design teams collaborated from inception, establishing a new benchmark for integrated design in all future Beyaz Fırın endeavors.

Beyaz Fırın Etiler: A Return to Roots with Art Deco Elegance

The opening of the Etiler Beyaz Fırın in 2017 represented a significant historical milestone for the brand. Established in 1836 in Balat, Beyaz Fırın had primarily thrived on Istanbul’s Anatolian side, especially in Kadıköy. The Etiler store symbolized its triumphant return to the European side of Istanbul after nearly two centuries.

Housed in a standalone building from the early Republic era, the reconstruction honored its original design while incorporating a fresh vision. The architectural and visual concept drew profound inspiration from the Art Deco movement, echoing the very era when Beyaz Fırın transitioned from a traditional bakery to a sophisticated patisserie. The design elegantly wove together the brand’s rich heritage, a delicate balance of tradition and innovation, and a timeless aesthetic.

The “1836 Balat” legacy was subtly yet powerfully integrated into the details. Exquisite wrought iron elements were meticulously incorporated into the garden, balcony railings, the interior staircase, and the decorative divider behind the main counter, gracefully greeting customers with a tangible link to Beyaz Fırın’s illustrious past.

Beyaz Fırın Kanyon: Harmonizing with a Distinctive Identity

Following the Etiler success, Beyaz Fırın opened its Kanyon store. Kanyon is more than just a shopping mall; it possesses a truly distinctive and striking architectural identity. Our design for Beyaz Fırın within this unique open-air retail complex aimed to harmonize with its surroundings without ever compromising the brand’s inherent character.

The decorative metalwork, first introduced as a design signature in the Etiler store, was elevated to a more magnificent and expressive form at Kanyon. The high ceilings and expansive, daylight-filled façade were imbued with a unique character through wrought iron details that were further developed within the brand’s visual language, creating a cohesive yet grand statement.

Beyaz Fırın Göktürk: Embracing "Whiteness" and Brasserie Style

Göktürk, a burgeoning residential area on Istanbul’s outskirts, welcomed a new Brasserie-style Beyaz Fırın concept. In this store, the notion of “whiteness” became a more prominent feature in the design language. White-painted wrought iron details were beautifully complemented by soft-toned, light-filled interiors. Matte ceramic flooring in soothing pastel shades and carefully curated artworks adorning the walls contributed to a calm, airy, and inviting atmosphere.

Moda & Nişantaşı: Compact Elegance and "Kriska" Innovation

The subsequent Nişantaşı and Moda stores distilled the essence of this evolving concept, designed on a smaller scale to cater primarily as bakery-patisserie outlets offering a limited menu in compact, elegant settings.

At Mall of İstanbul, we tackled a spatially challenging site by reimagining it with a sculptural installation utilizing the “Kriska – art with chains” approach. The result was a fluid, dynamic, and visually captivating gesture that added an artistic dimension to the architectural layout.

Finally, our journey culminated in January 2025 with the opening of the Kızıltoprak store. Conceived as a quick stop-in point with a self-service concept and a limited menu, this branch perfectly responds to the needs of a fast-paced, urban setting, showcasing Karbon’s ability to adapt and innovate within diverse urban contexts.
